My Favorite Juices

Today marks day 25 of following a vegan diet. As some of you might now I have been dealing with gallbladder problems for the past three months so I have been eating mainly raw fruits and veggies, some grains and legumes, healthy fats, and occasional tofu or tempeh. I have been enjoying this way of eating and feeling better and better every day. I have been adding juices in between my meals so I wanted to share with you the recipes because I really love the taste and the way I have been feeling.

REMEMBER

To eat well, you have to follow a balanced diet, which includes all types of foods to obtain a variety of nutrients.

If you like the idea of “drinking” fruits and vegetables, because that way you increase the daily consumption of these foods, you might want to consider shakes or smoothies because these include other nutrients, such as fiber. When you use a juicer you do miss out on fiber so you want to make sure you are getting your fiber from grains, other veggies or  healthy fats such as avocado and nuts. Recommended daily fiber intake is 25-30g per day.

 

Green Machine
Makes one 12-ounce serving

  • 1 Granny Smith apples
  • 4 kale leaves
  • 8 parsley sprigs
  • 8 cilantro sprigs
  • 4 celery stalks
  • 1 cucumber
  • 1/2 lemon, peeled

 

Directions: Mix all in a juicer of your choice. If you use a blender just keep in mind you will have a lot of pulp.

 

Carrot Spice
Makes one 12-ounce serving

  • 4 carrots
  • 1/2 grapefruit
  • 1 1-inch piece ginger, peeled
  • 1/4 cup cilantro
  • 1/2 lime, peeled
  • Pinch cayenne pepper
  • Pinch salt

Directions: Mix all in a juicer of your choice. If you use a blender just keep in mind you will have a lot of pulp.

 

Red Magic
Makes one 12-ounce serving

  • 1 beet, peeled
  • 1 carrot
  • 1 1-inch-thick pineapple ring
  • 1 1/2-inch piece ginger
  • 1/2 lemon, peeled
  • 1 Granny Smith apples

Directions: Mix all in a juicer of your choice. If you use a blender just keep in mind you will have a lot of pulp.

 

 

What can you do with the pulp from juicing?
  •  Make a veggie broth by boiling pulp with water, herbs, and spices, then straining.
  • Make a “fruit tea” by boiling fruit pulp with water, adding spices such as cinnamon or ginger, cooling, and then straining.
  • Use veggie pulp to add nutrient density to mac n’ cheese or pasta sauce, or layer into a lasagne.
