Coconut French Toast

Makes: 4 toasts

INGREDIENTS

  • 4 slices of banana bread
  • 1/2 cup of egg whites
  • 1/2 cup of unsweetened almond milk
  • 1/2 TSP of vanilla
  • 1/2 tsp of cinnamon

For toppings

  • 3 strawberries
  • 1 tbs of walnuts
  • 1 tbs of coconut
  • 2 tbs of sugar free maple syrup

PREPARATION

  1. Heat a non-stick pan over a low to medium. Grease pan with the coconut oil cooking spray.
  2. Scramble the eggs, almond milk, cinnamon, and protein powder in a medium bowl.
  3. Dunk the Ezekiel bread in the egg mixture for 15 second on each side.
  4. Cook the Ezekiel bread for 2-3 minutes on each side until golden brown.
  5. Serve warm with toppings.
