Chicken Parmesan

Ingredients

  • 1.5 pounds of organic skinless chicken breast halves
  • 3/4 cup of oat flour
  • 2 tbs of walnuts
  • 1/4 tsp of pepper
  • 1/4 tsp of salt
  • 1/4 tsp of garlic powder
  • 1/2 tsp of Italian seasoning
  • 1 egg, beaten
  • 1 egg white
  • 3 cups bottle of Monte Bene organic Basil Tomato Sauce

Preparation

  1. Pre-heat oven at 400
  2. Combine oat flour, walnuts, pepper, salt, Italian seasoning and garlic powder in shallow dish.
  3. Dip chicken in egg, then crumb mixture; turn to coat.
  4. Arrange chicken in 13 x 9-inch baking dish.
  5. Bake 20 minutes
  6. Pour sauce over chicken. Bake an additional 10 minutes or until chicken is thoroughly cooked.
  7. Serve with side of red potato wedges and zucchini spaghetti
